Add 1 to 2 tablespoons of spirits (like bourbon or amaretto) or to replace a portion of the milk with 1 cup of light beer. A small amount of baking soda helps with browning and crisping. Use Buttermilk as an Alternative. Let the batter sit for 10–15 minutes before cooking letting it rest. Bake Them in the Oven for That Crisp Finish. If you set your oven a little higher, to 300°F, this trick will crisp waffles even further in addition to keeping them nice and warm. Just remember to place them directly on the oven rack so the steam can escape. We hope this helps!
