So sorry to hear you’ve had issues with food sticking. This is not an uncommon complaint, but it’s also one that is easily remedied with proper preparation. It’s important to remember that your NITRO Carbon pan isn’t pre-seasoned out of the box, but like cast iron, the pan will become well seasoned overtime and begin to develop nonstick-like properties. Just like cast iron, the more you cook with your pan using butter or oil, the more seasoned it will become and the less likely food will be to stick. To avoid burning food, we suggest starting on medium-low heat and working your way up as needed. We also recommend to avoid cooking stickier foods (like eggs, cheese, or tofu) until your pan is well seasoned. To remove food residue stuck to the pan, you can simmer a little water in the pan on the stove for 3–5 minutes to help loosen the residue, then clean it normally. You can also try making a paste of coarse salt and a little water and using that instead of soap to remove the residue. Then dry the pan with a soft cloth.
